The origins of the Center for Culinary Arts, Manila (CCA) trace back to an inspiring encounter at Cravings, a restaurant and bakeshop established by the mother-daughter duo, Annie Guerrero and Badjie Trinidad. This pivotal moment occurred during a visit by Canadian delegates from the Northern Alberta Institute of Technology. Struck by the culinary delights at Cravings, one visitor posed a simple yet profound question: “Where do Filipinos learn how to cook?” Guerrero and Trinidad responded that culinary skills were traditionally passed down in Filipino home kitchens. This conversation ignited the idea of establishing a formal culinary education institution in the Philippines.

Seizing this inspiration, Guerrero and Trinidad embarked on a visionary journey with Dr. John Knapp, the project coordinator from the Northern Alberta Institute of Technology, and in collaboration with The College of Home Economics of the University of the Philippines. This ambitious project aimed to create a structured, effective curriculum that would provide a professional foundation in culinary arts. After three years of meticulous planning, curriculum development, assembling a team of expert chef instructors, and constructing the necessary facilities, CCA Manila was officially established in November 1996.

The school's establishment marked the beginning of a new era in culinary education in the Philippines. In 1997, CCA launched the country's first formal culinary education program, the Diploma in Culinary Arts and Technology Management (DCATM), paving the way for future culinary professionals.

Graduates of DCATM being an accredited ACF program automatically become Certified Culinarians (CC).  They can apply for  higher certifications after obtaining work experience and taking a practical and written exam. An ACF Certification is recognized internationally and will increase your chances of being employed.
